Taste of Tuesday

When Michael's home, I'm really good at sticking to my meal planning and consistently cooking dinner. Which makes me happy for many reasons. 1. I enjoy to cook. 2. My husband likes to eat and if I get home from work, it's the first thing he wants to know - what's for dinner. 3. If I don't plan ahead, I often don't have ingredients that I need and we don't live close enough to a store!
However, when he's not home, it's hard to cook for one person. Therefore I resort to one of two plans.  Plan A is to cook one big meal and live off it all week (has to be something that I like to eat as leftovers because I don't like just any leftovers).
Plan B is to cook one big meal and freeze the rest! This recipe makes for the perfect freezer meal!
Tator Tot Casserole
I realize this picture may not be very appealing, but it's the only way you can see the layers of ooey gooey goodness! And let's be honest, I'm not a professional. :)

This is a yummy (not too healthy) recipe and it's very easy! You can make ahead and freeze as well! 

Bag of frozen tater tots
Diced onion
1lb beef/venison burger (We use venison burger for the most part)
Can of cream of mushroom soup (or cream of chicken isn't bad either)
Mixed vegetables (you can buy a mixture of canned/frozen of your choise - I used veggies I have frozen from our garden and I just pick a couple bags of each and mix them together)
Little bit of shredded cheese
Little bit of sour cream (approx 1 cup - I just eyeball it)
Optional: Spices such as garlic, salt, pepper, rosemary, basil.

Cook burger with diced onion

In separate bowl, combine veggies, soup, and sour cream. Mix well.

Spread burger mixture on the bottom of a baking dish. Top with veggie mixture. Sprinkle a little bit of cheese over top. If spices are desired, you can sprinkle those over top of the layers at this time.

Layer the tatertots on top. You can dump them on top or be type A like myself and place them one by one in a row until the entire dish is covered. :)

If you are preparing for a freezer meal, stop at this point. Cover and freeze, 

Bake uncovered at 350 for 30-45 minutes or until tater tots are golden.

This & That - Weekend Recap

It's Monday but I'm just now getting around to recapping the past weekend. 
I was fully capable of doing so yesterday, but I was tired and lazy. Truth. 

The weekend consisted of a little bit of this and a little bit of that!

Friday I took a half day off work and headed to the hall to help setup for the QDMA banquet. Michael was supposed to help also, but he wound up having other things to do that he says were "more important". For any readers who don't know what QDMA is, it's Quality Deer Management Association - a group dedicated to improving the future of whitetail deer hunting. The hubby and I are board members and it just happens to be the event that brought us together 4 years ago!

Saturday afternoon we headed to the banquet to help finish setting things up and get the party started! Michael works a game and drinks beer (fun) and I sell multiple raffles, show items, turn in money, take pictures, and run my ass off (in heels) ALL night. Once it's over, I'm exhausted. But, it's all for a good cause and overall it's a good time! The people are fun and make it worth it!

My little sister and Mom made out like a bandit! She only spent $10 and won SO much stuff! Mom won two bottles of liquor and $80 worth of raffle tickets for prizes. Jasmine put the tickets in for prizes and she won everything she wanted! TWO paint ball guns, paintballs, a bow, and a set of aarows! She was so excited! 

Saturday night turned into a late night after clean up and some drinks. Therefore, Sunday morning came too early. I don't know what the deal is, but on Sunday's (the only day I can sleep in) I am up early! It drives me insane! But, on a good note, I was able to wake up to my family staying at our house and Mom making breakfast. Jasmine woke up ready to shoot paintballs. (inside wide eyed emoji icon). 

So outside we went... 
Then we went snowmobiling...
I love spending time with this little minion!

Then we relaxed the rest of the day!
I could say we sun bathed too, it just wasn't outdoors. Haha!

Five Friday Ramblings...

Well I went to bed at 8:30 last night and I woke up feeling refreshed and well rested! Now if that isn't a great way to start a Friday morning, then I don't know what is!
This week has flown by and has been super busy! I'm out of work early today and that makes it even better!
But what makes it the best, is that Michael has been home from work this week and we get to spend
all sorts of time together! :)
So here are 5 random ramblings on my mind this fine morning...
Yesterday, February 20th, marked the day that I met Michael - 4 years prior.
Four years seems like a long time.
I remember that day just like it was yesterday!
I had recently been out of a relationship and had zero interest in dating. But my dad INSISTED I would volunteer at this event filled with great guys. {yeah whatever, Dad. There's no such thing as a great guy - that's what I told him}.
And then... this tall handsome guy walked through the door with a big beautiful smile on his face. We caught eyes and I had a feeling I never really had before. I didn't have any interest in one of the other 300+ guys in the hall but for some reason, there was something about Michael! So long story short {I'll save all the details for another day}, it was 4 years ago that we met each other and we haven't went one day since then without talking! Even though I wasn't intended on meeting someone new or even getting involved in a relationship, I fell head over heals for this man and I'm so thankful my Dad made me go to that event! God sure does work in mysterious ways, doesn't he?!
{We didn't take a picture the first night we met, but this is the first picture of us ever taken together a couple months later! My Dad wouldn't let us go on a date or "hang out" again until we got to know each other over the phone. Ha!}
Remember when I posted about my hometown being all over the news because 5 garbage bags of dismembered body parts were found on the side of the road {just around the corner from my Grandma's}??!
Well there has been many updates since then and I still just can't even believe it! This world we live in sometimes is unbelievable!
~ At first it was believed that there was more than one body in all those bags. It's been concluded that it was only one body. A 32 year old male.
~ So who would kill someone and dismember their body, put the limbs in garbage bags, and then dumped the garbage bags on the side of some random back road?!? HIS MOTHER!!! {Crazy as hell isn't it???!}

Work has been a little hectic. Some days I wonder if I'm even going to have a job the next day because I feel like I'm not performing at my best ability. I can now rest assured that is not the case. After being on vacation for a week, I came back to work and recieved a little "MAD" certificate for my performance lately by going above and beyond to provide exceptional service {MAD meaning Make a Difference}! What an honor! I also felt a little relief that maybe I wasn't showing my stress as much as I had thought I was.
Then on top of that, I recieved a note that I was receiving a bonus based on sales performance. Yippie!
I'm still working on my entry way project. *sigh*
It's not that it's been hard or anything... it's just time consuming.
I've got my third coat of stain on the trim last night and I'm debating on putting on another stain or not... I want it to be dark... it was previously very light oak. You can see previous pictures here. What's your thoughts/suggetions?!
It's official... we're going to the Duck/Buck Commander Warehouse!
Michael and I were given the opportunity through QDMA to go learn more about hunting, whitetails, habitat, QDMA, etc. Which just so happens to be in West Monroe , LA with the Duck Dynasty crew! Last year we weren't able to attend when it was at Lee and Tiffany Lekosky's residence and we were super bummed. But this year makes up for it! :) We are pretty excited to not only learn more and get our Deer Steward training, but also to hopefully meet some of these hilarious celebrities!  
Well folks, that's all I have to share for today. I'm off to cocktail hour with the QDMA guys! We're prepping for tomorrows event! Have a great weekend!

Weekend Recap - Party Hardy!

Thank God for federal holidays being on a Monday... especially after an amazing weekend of nonstop partying!
Not only was last week off work amazing, but the weekend really topped it off!

The weekend started off with the George Strait concert with opening guests, Little Big Town! There was a group of 8 of us that went. Michael's Mom, her boyfriend, Michael's Aunt and her friend, and two of our friends. We went out to eat on the way down and had a delicious Valentine's Day dinner!
 The concert was really awesome! The King played 32 songs! I've been to a lot of concerts, but I honestly don't think I've ever been to a concert that played that many songs! I think I could have sat there all night listening to him play. He truly has a ton of great songs! During one of his slow songs (I'm drawing a blank which one) a guy down by the stage proposed to his girlfriend. Now that would be a memorable engagement having the King be the first one to congratulate you in front of thousands of people! The only negatives about the concert was that beer was $9.75... and there was an air vent right above us so I was cold the whole time.

He came back and played 4 more songs, then farewell again! 

We didn't get home until 2:30am. I'm not a good passenger because I totally couldn't stay awake. Luckily, we were able to sleep in a little bit on Saturday morning.

Saturday afternoon we headed down to my Mom's to stay the night. We were in town for my twin girlfriend's 30th birthday celebration. One of their husbands set up the surprise and the girls thought they were going out for a bachelorette party. Then they showed up at a local bar and seen 40+ friends and family. The look on their faces was priceless! Then they said, wait so we're really not going in a limo?! Haha! We had a lot of fun hanging out with friends we don't see often enough! And we stayed up way too late! It's a good thing we don't do that often!

Sunday morning we lounged around with my Mom and Greg and eventually went to breakfast. Or should I say brunch because we were not moving very fast in the morning... Once we cured our bellies and headaches, we headed over to my aunt and uncles that live on the lake to go out on the ice. Every weekend there is a bunch of snowmobiles, four wheelers, trucks, dirt bikes, ice fishing, etc out on the ice just riding around and racing. I used to go out there quite a bit when I lived at home. Michael's never been out on the ice so I was kind of excited to take him out there. Plus, we never really get to hang out with my aunt and uncle so it was nice to get together with them too!

We passed this sled and we all died laughing at the age and the raised handle bars like a chopper. Then it pulled up next to us and we really died laughing. I mean, I think I almost peed my pants it was that funny. {You had to be there because I'm sure you don't find it as funny reading this}. Then it turned into a joke that this 1978 sled was nicer than the sled Michael recently bought me. Haha! ;)

Looking back at the pictures from the weekend really makes me giggle and smile - so many laughs and memories! It honestly was one of the best weekends we have had in a long time!! I'm especially thankful for my husband who spent a small fortune to take us to the George Strait concert for Valentine's Day along with all the other festivities we attended! I cherish the weekends and memories that we have together when he is home! {and he's home for the week, yippie!}
