Easiest dinner, ever.

No joke. Easiest dinner ever.
 
 
As I was cleaning and organizing my cellar Sunday night, I realized I had a lot of salsa left from last years canning goods. Which gave me the thought of making one of my favorite easy meals that my Grandma Julie taught me!
 

What you need:

Chicken {4 breasts}
Salsa {I used one of the quarts of "hot" salsa I canned from our garden}
Sides of your choice - rice, veggies, whatever you like.
 
That's it! That's all you need! Well and a crockpot of course...
 
Place the chicken in the crockpot
 
Pour salsa over the chicken with plenty to cover.
{If your not sure if there's enough, just remember that more is better so that it doesn't dry out}
 
Cook on low for 6 hours
{If your gone for longer than 6 hours, just be sure your crockpot will shut off and just stay on warm.. or set up your crockpot on a delayed timer so it doesn't start right away}
 
Serve with your choice of sides.
I choose brown rice or long grain rice. It's a good mixture! My salsa is thick and chunky so I don't usually serve a vegetable as well, but you could!
 
Optional topping: cheese!
 
OR... you could shred this up and make up some chicken tacos!
 
Don't you love an easy meal with very few ingredients?!

I'm off to run some errands and go stock up on groceries and figure out what next weeks meals will be! Gotta plan a head when you live in the sticks with no grocery store {gas station groceries don't count} within 30 miles! :)

  5. I am telling you I have slaved over making these crazy and unique meals and I get an "it was good". I poured salsa over frozen chicken and stuck it in the crockpot and I got "babe this was great!!!!" So...easy crockpot meals for the win!
