Avocado Fiesta Salsa

You guys, this Avocado Fiesta Salsa is a must have! It's perfect for summer time and oh, so delicious! I have to thank my Mom for introducing me to this recipe! She didn't have a name for it, so I just made up my own. Ha! 

What you need: 

2 med/large Tomatoes (diced)
Frozen Sweet Corn (12oz or more)
2 cans Black Beans (drain & rinse)
Fresh Cilantro
Scallions (chopped)
2 Avocados (cubed)
Olive Oil
Dry packet of Guacamole
Dry packet of Italian Dressing 

This recipe can be mixed with more or less fruits and veggies so feel free to adjust the quantity to your preference! 

In a large bowl, mix diced tomatoes, corn, black beans, avocados, and scallions. Eyeball ingredients to determine amounts and add more if desired. 

In a blender bottle or salad dressing mixing bottle prepare Italian dressing according to the directions on the packet (mix with olive oil, vinegar, and water). 

Add packet of guacamole to the dressing mixture. 

Pour dressing mixture over salsa mixture. Mix well. 

Garnish with cilantro (or add lots to the mixture, whichever your preference). 

Refrigerate for an hour before serving. Serve with tortilla or pita chips.
